New Year is still keeping me on my toes, setting up new home and studio is taking forever so these days quick recipes are really my life saver, but each passing day I have that satisfied smile on my face that things are shaping up the way I planned
.
When I first saw this bread on pinterest , I just knew that I had to bake this one , so checked the recipe immediately but due to some other work just forgot to pin it.
Next day when I decided to bake it, I just could not find the exact recipe, as I read the recipe previous day so remembered the main
ingredients and rest I added according to our taste preferences.

This quick bread is non yeasted bread so no rising time is required , its texture also is different from the normal yeasted breads , more
dense but nevertheless delicious. Recipe mentioned about cheese, I had two different in my fridge so used a mix of both cheddar and

There is nothing like the smell and taste of freshly baked bread when the weather is cold and lots of cheese, buttermilk and herbs
all these together in warm bread makes it tastes magically delicious. It’s a combo that I don’t mind having any time of the day.
Ingredients
- 2 ½ flour
- 2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1 tsp salt
- 60g parmesan cheese
- 60g grated cheddar cheese
- 1/2 cup black olives, pitted and sliced
- 1 tsp salt
- 1 tsp red chilli flakes
- 1 tsp dried thyme
- ½ tsp oregano
- 2 eggs
- 2 1/2 Tbsp olive oil
- 1 1/4 cup buttermilk
- Sea salt, for topping
Instructions
- Sift together flour, baking powder, soda, salt, into a
- large bowl. Add cheese, olives thyme, oregano, red chilli flakes and mix them
- together.
- Preheat oven to 180C or 350F. Butter a loaf tin and dust
- with flour. Set it aside.
- In a separate bowl, whisk eggs, oil and buttermilk till they are well combined.
- Combine wet and dry ingredients to make a sticky batter and transfer this batter in prepared tin and tap it to spread it evenly.
- Brush the top of the batter with the egg wash and sprinkle some grated cheese.
- Bake for 40 - 45 minutes or until a fine skewer inserted
- in the middle of the loaf comes out clean. Let it cool and remove it on a wire rack tastes best when just out of oven.
