Breakfast Burrito from Mexico : Day 17 of 30 Days 30 Breakfasts 30 Countries
4Everyone have their so easy to prepare and goto recipes, I too have few of them, Burrito is one of them. Burritos are best way to use whatever leftovers like mixed vegetables, paneer in any form, eggs , potato , practically any thing leftover you have in your refrigerator.
Even if I do not have any leftovers, I do not mind making the filling afresh for these flavourful, spicy hot and so cheesy Mexican breakfast burrito. Best thing about them is just throw whatever you like in a skillet and roll it all up in a soft tortilla for a scrumptious breakfast.
These burritos are stuffed with crumbled paneer{you can use ricotta cheese if paneer is not available}, corn kernels, onion mushroom and spices. Sometimes I like to use shredded veggies with some mozzarella and boiled eggs; you can use any filling of your choice with some melting cheese.
They even make a nice and filling lunch or dinner with any green salad or you can have greens as a part of filling to make it a complete meal out of it. If you are on low carb diet just replace the whole wheat tortilla with low carb tortilla (available in markets).
I like to make my tortilla at home (Try them they are so easy and tastes so different from the store ones (recipe here). When I prepared Norwegian lefse yesterday I saved some because I had a feeling, that they are going to work beautifully with the burrito filling which I had in mind for today’s breakfast, and work ? They were awesome!
One more thing which I emphasise is avoiding use of too many spices in the filling; I use just pablano chillies if I get them or simply crushed red peppers with some oregano to perk them up and of course a generous serving of hot salsa just before rolling them up.

Ingredients
- 1 cup corn kernal( frozen or fresh)
- 1/2 cup sliced onion
- 2 teaspoons fresh lime juice
- 1 tbsp pure olive oil
- 1 cup crumbled paneer/ rocotta cheese
- 8 flour tortillas { recipe }
- 1 cup Fresh Salsa/ 1/2 cup bottled
- 4 Tbsp mozerella cheese
- Guacamole { recipe here} (optional)
Instructions
- Heat a skillet or pan over medium-high heat. add olive oil to it. Add sliced onion and saute them for 2-3 minutes and follow it with adding corn, Cook for another 3-4 minutes.
- Add crumbled panner or ricotta cheese and add salt crushed red chilli as well as oregano to season the filling and cook for 2-3 more minutes. Remove from heat and set aside.
- Heat a girdle or flat pan and lay a flour tortilla on to pan. Heat 20 seconds on each side or just until soft. Remove from pan, and keep warm. Repeat procedure with remaining tortillas.
- Spoon 2 tablespoons filling, 2 tablespoons Fresh Salsa or 1 tbsp of bottled, If you are using guacamole add some and 1/2 tablespoon cheese down center of each tortilla.
- Roll up and serve. Heat from filling is enough to melt the cheese if it is not melted yet you can heat up these burritoes for 2-3 minutes in oven just to melt the cheese
