Bombay Masala Scrambled Eggs | Delicious and Healthy Breakfast To Start The Day
11Its long time that I posted recipe on my blog, have been busy with some personal commitments and work; so not much photography except professional commitments. And few recipes which I am developing for a client can’t be posted here since those are exclusive ones.
After shifting home, more or less the feeling of being home has started to sink in and we are becoming more and more comfortable around being here and started getting some time to click some pictures. If you are regular here you know my cooking philosophy simple, healthy, wholesome and easy to make food that can be made in short time and do not leave you with pile of dirty dishes to do after your meal is over.
And at times simple meals are just the best meals. What can be simple and easy than scrambles eggs on toast, Eggs are one of my favourite breakfast food to start my day, rich in protein they provide me an ideal base to start my day. I just throw in some chopped/sliced vegetables and herbs and add a glass of fresh juice or sliced fruits for a right combination of proteins and complex carbs { try to add fiber wherever I can}. What’s more, eating eggs in breakfast keeps me full and tide me over till lunch so not much of unhealthy snacking in between except any of my herbal tea.
Simple it may sound but in my case like most of other things I like my food to be cooked in certain way. Dry, stiff, rubbery, overcooked with brown spots where they are stock on pan not my style of doing them. I always like my scrambled eggs bit wet and not completely done like 90-95% done ness is what I aspire for, and they should be on my plate as soon as they are done.
Other thing which I like is to add various seasonings instead of plain salt and black peppers, this time I made them Bombay masala style with Pav bhaji masala. Delicious and spicy hot they were which was balanced by apple juice on the side.

The Pav bhaji masala in this makes an interesting twist, Rekha. Going to try this sometime soon. Nothing like eggs for the days when you are rushed for time and ideas!
