Quick n Easy Recipe : Pan Roasted Pesto Paneer
12I love fresh herbs but I told you same in the last post too, so this week when I made fresh pesto. Half of that was used in spaghetti but still had some leftover in the fridge which I used for this pan roasted paneer in basil pesto next morning.
So next morning when making sandwich for foodie teen’s lunch pack, I used fresh pesto as a filling for the sandwiches. He always prefers homemade lunch pack than ordering from his college cafeteria (one of the healthy food habits he has developed).
Coming back to Paneer, I love this paneer as it is quick n easy to prepare, exploding with fresh flavour and pairs beautifully with any meal. As it is with moving house, I am concentrating more on easy and quick dishes so that I can concentrate more on that part (some times you do not realize that how much you have accumulated, though I keep clearing clutter every now and then but still there is so much to sort through. So I keep this post little brief and share the recipe.

Paneer and pesto are a great combination of protein and with vitamins and minerals, Olive oil and nuts in the pesto provide healthy fat which aids in absorption of fat soluble vitamins and minerals. All this makes it one of nutritious dish to meet the nutritional demand of growing kids.

Lovely. I do it with thin slices of paneer sometimes. It makes a nice meal in itself when served with loads of fresh salad greens. Even cucumber slices

Yes …that was exactly my thoughts when I made that …there should be some paneer dishes that do not have tomatoes in it
