Old saying say ‘breakfast like king’ holds perfectly true for my family. We just love our breakfasts and however much may be the hurry; breakfast is one meal which no one from us is ready to skip.
Even in those days when I press the snooze button of the alarm clock and resulting morning rush when nothing seems to fit in time, we make time for the breakfast. No, I am not going to write an article here about the importance of healthy breakfast.

Coming back to quick breakfast these mini quiches are one of those things which you can make under 15 minutes or you can make ahead and just pop in oven to reheat for one of those times when you just want to have a quick breakfast or a snack for hungry kids.
There can be many variations depending on personal choices and dietary preferences, just add fillings of your choice and bake. At our home we like to add loads of veggies to our most of the dishes so how can this be an exception. Both teens love their cheese as well so one muffin tray with extra cheese.
You can fill your quiches with just about anything; these are a great way to use up leftovers, cooked vegetables, Its your quiche you decide there is no hard and fast rule here.Whenever I serve them for hors d’oeuvres for the party, usually these are the first ones to disappear
. Am I complaining…? Nah!
Foody teen who has joined gym for strength training especially loves the egg white ones post workout. High protein post workout snack or breakfast, eat them any time they are just delicious. Health wise these are good for the people who are looking to control their food portion size as they are individual dishes they have built in portion control.

Yes it is 4 eggs plus 4 egg whites !
Loved the spice from the red pepper flake! For a 6-muffin pan, I used 1 c egg white, 1/2 c bell pepper, 1/2 c red onion, 1/2 c mushroom, 1 tomato, and 1/2 tsp each salt, Italian seasoning, and crushed red pepper.
