Post Workout High Protein Vegetarian Meals | Scrambled Tofu
8Board exams results out and collage entrances are out of the way, foody teen scored ‘A’ in all his exams and bags an admission for himself in on of the prestigious engineering school , I am feeling much lighter (metaphorically at least… sigh! ) and both of us Mom and son are back to gym.
Son is not really looking to lose weight, but he is a good swimmer and look to strengthen his abs more which may help him to improve his performance in swimming so more focus is on strength training.
along with a side dish of complex carb in the form of whole grains, vegetables and fruits salads to provide enough nutrition to meet
increased nutritional demand of body post workouts.
Breakfasts like this delicious and spicy scrambled tofu on a whole wheat bread with a glass of low fat milk is enough to provide a healthy and nutritious start of the day and makes for high protein vegetarian post workout meal.

Ingredients
- Tofu: 300g
- Olive oil 1.5 Tbsp
- Onion 2 tbsp
- Tomatoes ¼ cup chopped
- Red bell peppers 2 tbsp chopped fine
- Green chilli peppers minced 1
- Cilantro/ Green coriander leaves 1 Tbsp
- Salt ½ tsp or to taste
- Red Chilli powder
Instructions
- Crumble the tofu with fork or using your hands and keep it aside.
- Heat olive oil in a cast iron skillet for a minute and add chopped onion and minced green chillies and let the onion sweat a bit, do not cook them too much, just enough that they are pink and translucent. it will take about 2-3 minutes.
- Next add chopped tomatoes and red bell papers and cook for 2-3 minutes on medium heat.
- Follow it up with adding crumbled tofu and mix whole thing very well. Season it with salt and red chilli powder cook for 3-4 minutes and garnish with chopped cilantro.
Notes
Serving suggestions: Serve the scrambled tofu over wholewheat bun for a scrumptious and healthy breakfast or enjoy with Chapati and green salad for a delicious lunch.

That’s pretty interesting! While I love to eat tofu .. the husband on the other hand runs away from it. May be scrambling it will work for it taste bud.
