Eggplant, brinjal or baingan
whatever you call it in your part of world is such vegetable that either you
love it or you hate it , to my knowledge at least . I belonged to second category
that is haters, never found this interesting enough even to give it a try.

But when during one of our outings, with out
me knowing the ingredients hubs ordered an eggplant panini sandwich, I devoured
it like there is no tomorrow, with hubs watching me with a twinkle in his eyes.
When he told me what it was, it was too late and I was a convert from eggplant
hater to eggplant lover.
Now eggplant makes its appearance at
least once a week and that’s quite frequent if you see the variation and
frequency of repetition of particular food on my table. While I still like the
idea of grilled eggplant in any form, Hubs prefer to go with traditional Indian
baingan bharta.

Baingan bharta is smoky roasted or char-grilled eggplant de-skinned and stir
fried with fragrant mix of spices and tomatoes. For a little twist I add a hint
of sumac which takes the dish to just another level. This time I did not add
any thing extra to the dish but I love to add some more texture to it by adding
some chickpeas or peas to give it that extra bite.
For baingan bharta make a point to choose Indian eggplants which are not
too big have firmer flesh and less bitter. If you go for organic ones which I
prefer to buy whenever they are available, organic ones are always not
available in the stores but worth the effort and a bit of extra money.

it reminds me of my grandma she used to make the best baingan bharta…i miss her so much
