Low Fat Apple and Cinnamon Cake
6First of all let me wish you all a very happy new year 2012. May it brings the happiness health and prosperity in store for all of you. Last year have been very kind to me since there were so many firsts for me.
I stopped working full time and started my second inning as nutrition/food writer. Lifezing.com has seen a good jump in readership during past year.
Never ever, I had thought about writing a food blog but started one and happy that I did.
Started cooking at least one meal or part myself instead of depending on cook, so happy to see the kids and DH when they enjoy it.
I have started working on my first healthy recipes book, started learning about food photography and loving it to the core, never knew that holding a camera can be so exciting.
In short, a satisfying year, in which I worked towards my passion of promoting healthful eating and nutritious food.
I am thankful to almighty and to you my dear readers, who have always encouraged me and appreciated me. I wish that in 2012 also, I would love to receive much more love from you (I am always greedy for that).
I started my New Year day with baking a cake (huh! after so much talk about healthy food?). Yes ! This one is actually healthy baked with ¼ of the fat and very less sugar, since it is naturally sweetened with fruit.
When my son asked for a cake in the morning of new year, I did not want to disappoint him by saying No, but since on first day of year I did not want to feed them any of the unhealthy stuff so decided to bake with fruit.
When it comes to baking and fruits my mind instantly turns to apples which I almost adore. Fiji, delicious, granny smith, gala our own Kashmir give me anyone I love them all.
When you talk about baking with apple another thing which comes to mind is cinnamon, to me apple and cinnamon sounds like a great pair, a perfect marriage of tastes.
BTW have you noticed a change in color scheme on the blog. Please let me know how is it looking now
