What is a comfort food? Comfort food for me means a food
which simply provides you comfort lights up your memories with just its warmth
and aroma.
Sometimes I think that comfort food is termed so, because it
works as a salve for our souls in ways that go beyond taste of the food alone,

Rajma-Chawal (rice) is a dish which is true delight for every

This Kidney beans curry is so versatile that you can use any combination
of spices and it comes out perfect. You cook it Punjabi style, Kashmiri style
or any other way, its always yummy, You wont believe in the southern part of
India I ate Rajma cooked in coconut gravy and that was also like…perfect !!.

In Punjabi style, rajma is cooked to a creamy consistency
with masala paste of ginger, onion, tomatoes and a mix of species. Kashmiri’s generally
omit onions and use asafoetida which provides it a characteristic aroma and
taste.

Prep Time:5 minutes Cooking Time: 35 Minutes Serves: 4 persons Serving Suggestion : Enjoy ladlefuls over steamed rice with a bowl of thick yogurt or raita . _____________________________________________________________________
Make Basic masala from this
recipe.
Take approx one cup masala paste from above recipe and add
it to a thick bottomed pan.
Immediately add cooked kidney beans along the liquid and
mix it well with masala paste, add rajma and cook for 10 minutes.

I always make extra masala and freeze it. Later it saves me on a lot of time whenever I cook rajma…cause then all I have to do is boil rajma, add paste, water and let it simmer on low heat. That said, nothing can really beat the taste of freshly made food. Nice recipe- thanks for sharing!
