Everyone’s got their favourite recipe of egg salad, some
like it in its classic avtar loaded with mayonnaise plus all the works. For

At our home, we generally like to have classic and ethnic food,
but if it’s too unhealthy then I try to make over the recipe in such a way that
it retains its classic character and nourish my family without compromise on
taste or healthy factor.

One such recipe is classic egg salad, in which recipe uses
so much mayonnaise that even healthy and perfect ingredient become mystery and
lose the character and taste too.

This healthy makeover tastes as good and as creamy as the
original version is without going overboard with the use of mayo.

Even mayonnaise used here is olive oil mayo instead of regular
one. Olive oil is one of the heart healthy fats; so little less guilt, I guess! Our favorite way of enjoying this is on a scooped out burnt toast with lots of black pepper to go with a hot cup of coffee.

Now this is indeed the lite and healthy version. I thought my version which uses lite mayo is already perfect, but it can still be a lot healthier with your twists. Thanks for the post!
