Sometimes simple food provides you more satisfaction than an elaborately done 5 course meal. Dinner time for our family is the time of the day, when we love to sit together over a simple healthy meal and enjoy the company.
Sharing our days events with simple small chit-chat (which may seem mundane to many) but simply the act sharing with each other makes it so much worth it.
Toasted sandwich with a salad is one such meal which we had recently, and since I am getting used to taking pictures whenever I feel like sharing my meals with you all.
Last weekend our dinner was these wholewheat toasted sandwich’s with cucumber beans and tomato sandwich with citrus zest dressing. Simple yet delicious!
Prep Time: 25 Minutes Cooking: 15 minutes Serves: 4 people (1 slice each) Serving Suggestion: Serve it with any salad or a warm soup. _________________________________________________________________________
Ingredients for Salad
- Cucumber cubed 1 cup
- Tomatoes Cubed 1 cup
- Red Kidney Beans 1/2
cup
- Lettuce leaves 6
leaves
- Apple Fiji
cubed 1 cup
- Flex seeds 2 tbsp

citrus zest favoured oil 2 tbsp
- Sea salt 1/4 tsp
Directions
- In a big salad bowl
toss all the ingredients except last three. Prepare dressing by mixing
sea salt, flex seeds and citrus flavoured oil ( recipe here) and pour over salad
ingredients. Toss it well and serve it.
- When ever preparing
salad try to add very less salt, that way you will eat less sodium as
well as you are able to savour the real flavour and crunch of the
vegetables and fruits.
- In case you don’t
have citrus oil you can use extra virgin oil or make your own aromatic
oils.
Ingredients for toasted Sandwich
- Home made salsa 1/2
cup
- Green bell peppers strips
1/2 cup
- Whole wheat bread
slice 8
- Ricotta Cheese 100g
- Chili flakes 1/2 tsp
- Salt 1/4 tsp
Directions
- Spread a layer of
salsa on wholewheat bread, followed by a layer of green bell peppers
equally over all the breads.
- Crumble ricotta
cheese with a fork and divide it equally over the toasts.
- Cover it with
another slice and toast in a nonstick sandwich toaster. I try to avoid
any butter or oil while toasting bread so its very low in fats and
complements the salad in which I used extra virgin oil.
