Chickpeas Paneer and Cucumber Salad

is the time to enjoy fresh and cool salads. If you read my blog regularly by
now you know that I am sucker for fresh fruits and vegetables, I am not saying
this just because they are healthy but I love the light feeling after eating
them.
Not
only salads are yummy to eat but pleasing to eyes as well. So for us summer
time is time to enjoy a variety of salads and its almost a rule for me to stock
my refrigerator with various ingredients which I can throw together and make a
quick meal out of it and this is not true just about salad but I like to store
cooked masala pastes and chopped veggies and beans for a quick curry (but all
this in other posts).
Now
coming back to Salads, It was a hot day, so naturally I was in mood to prepare a salad. I had some chickpeas but quantity was not much to make curry…
what next ? Decided to make chickpeas salad.
After checking on other ingredients in refrigerator, I found a bit of paneer too which also could
be used. Decided to make this chickpeas
salad and served it on whole wheat toast for a delicious lunch.

Okay, you might have a nice giggle at this, but to my knowledge, I’ve never had Paneer, this is a must try, because I know I’m missing out on all the goodness.

I loved the photos of your recipe. I always prefer a homemade recipe over anything, but I guess it is quite difficult prepare with these fancy foods often.
