My teenage son loves to eat eggs to the extent that he have to have eggs in his breakfast everyday, period! So I have to keep searching for recipes to make it more versatile everyday and keep collecting egg recipes.
Though he also now open to new dishes (thank god for that ) but two three particular recipes are his favorites.This recipe of scrambled egg sandwich is one of his favorite too.
Cook up this “egg-cellent” brunch/breakfast with a quick and easy scrambled egg sandwich. It can be perfect breakfast before school or an excellent snack for your kids lunch pack too.
- 2 eggs
- 2Tbsp of milk
- Cooking spray or 1 tbsp butter
- 4slices bread
- Salt to taste1 tsp
- red chilli powder 1/2 tsp
- 1/2 cup chopped onion
Melt butter over medium heat and saute chopped onion lightly in the butter.
Crack the eggs into bowl and add milk.Add seasoning and beat with fork until combined.Pour in pan and constantly stir until eggs are thoroughly cooked.
Put eggs on one slice of toast, top with other slice of toast.
Put this sandwich in toaster and cook till browned from all sides.Eat and enjoy with glass of freshly squuzed juice.A perfect breakfast for the growing kids.
