Aloo Bhe Sabji (Potato and Lotus Stem Curry)

Lotus root or kamal kakri as it is known as is full of fiber and many other nutrients. It is actually a root of lotus plant. You can prepare pakora or curry with this . This again is one of the recipe which I love to cook exactly the way my Mom cooks it . Though the process is elaborate and time consuming but the taste is worth it.
- Lotus stem (Kamal Kakri) – 250g
- Potatoes 500g
- Onion 2 medium
- Tamarind paste 2 tbsp
- Turmeric powder ½ tsp
- Chilli powder 1 tsp
- Salt 1 tsp
- Oil 2 tbsp
Wash, peel and cut lotus stem in to roundels and slit them length wise to stuff them with masala paste.
Immerse the stems in water and boil them for 10 minutes or so till they become tender.While lotus stem is boiling prepare masala paste by grinding onion chilli powder salt and tamarind paste.
After lotus stem is boiled, drain the water in a sieve.
With the help of spoon fill the masala paste in the lotus stem.
In a pressure cooker pour oil and add ½ tsp of turmeric powder and immediately add cubed potatoes in it. Sprinkle salt and cover with lid. Cook potatoes for 2 whistles and let the steam cool off and open the lid.
Now add stuffed lotus stem in the cooker and add remaining masala paste too. Mix well and cook for 2-3 minutes.
Serve hot with chapati.
