Quick and Easy Spinach and Cottage Cheese

Very quick and easy recipe to make something when you are in hurry and still want to eat a home cooked delicious meal. You can serve it as a warm salad too.
Ingredients
- Spinach 1 cup
- Indian Cottage Cheese (paneer) 1/4 cup cubes
- Green chili chopped 1
- Mustard seeds 1 tsp
- Paprika powder just a sprinkle
- peanutes roasted 5-6
- Salt to taste
- Oil 1 tsp
Directions
Pour 1 tsp oil in a deep bottomed pan and add mustard seeds and green chillis .
When mustard seeds start popping add chopped up spinach and cubed cottage cheese . Stir fry it for 2- 3 minutes and sprinkle a pinch of paprika. Take it out of fire and keep it in refrigrator to chill.
When you are ready to serve garnish it with roasted peanuts.
Serving Suggestions : Serve as a side dish with Paratha or simply mix 2 tbsp of shredded cheese to above mixture and use as sandwich filling.
